Summer corn grilled in its husk is so succulent it’s hard to improve on. Having said that, here the zestiness of the lime and the creaminess of the butter add extra dimensions of flavor to the corn’s natural sweetness.

  • ½ cup (1 stick/115 grams) salted butter, softened

  1. In a small bowl, mix the butter, zest, and juice until well combined. Press the mixture into another small bowl and smooth the top with a knife. Wipe off the sides of the bowl with a paper towel. Refrigerate until hard, at least 20 minutes.
  2. Preheat a charcoal or gas grill to medium-high. Place the corn directly on the grill and cook until the husk is blackened,
