I first experimented with this dish when I was working in a restaurant on the Caribbean island of St. Barts. Because the island is a French municipality, the supermarkets are amazing, filled with classic French delicacies, incredible cheeses, cured ham, and champagne, as well as small but well-curated selections of produce. After work I would wander through my local supermarket and put together the elements of a simple dinner to cook in the limited kitchen at my rented beach cottage. That’s
