  • Take the residue from the above juice mix, put in a large saucepan, add 2 litres ( pints) of water, and simmer for an hour or so.

Method

Strain into a jug, pressing to remove as much extract as possible. This will make a deep red broth, which you can use for borscht, or in a rich red risotto.
