Oyster Fritters

Ingredients

  • 1 small free-range egg, separated
  • 1 tablespoon olive oil
  • pinch of salt
  • 2 tablespoons plain flour
  • 3 tablespoons cold water
  • 6 oysters
  • olive oil for frying

Method

Mix together until you have a smooth batter the egg yolk, oil, salt, flour and water. Leave for the flour to expand for 20 minutes, and fold in the stiffly beaten egg white and the oysters.

Pour the oil into a frying pan to a depth of about 1 cm (⅓ inch), and heat. Drop heaped spoonfuls of the batter into the oil, making sure there is an oyster in each spoon, and fry until golden brown. Drain on crumpled kitchen paper. Serve hot.
