Another casual meal uses finely diced or coarsely minced venison. Season the meat with freshly ground pepper, a little ground mace or nutmeg, some cumin and allspice. Add a dash of Jalapeño Tabasco, Angostura Bitters and Worcester sauce. Shape into patties and cook on a hot griddle.
You will also need half a ciabatta per person, alfalfa sprouts, and then whatever else you like on burgers. While the patties are grilling, split and toast or bake the bread, on which a slick of olive oil and a scraping of garlic will do no harm. Heap on the alfalfa sprouts, any other salad or toppings, then the grilled venison burger and finally the top layer of bread. It couldn’t be simpler.
