Method

Another casual meal uses finely diced or coarsely minced venison. Season the meat with freshly ground pepper, a little ground mace or nutmeg, some cumin and allspice. Add a dash of Jalapeño Tabasco, Angostura Bitters and Worcester sauce. Shape into patties and cook on a hot griddle.

You will also need half a ciabatta per person, alfalfa sprouts, and then whatever else you like on burger
