You will need to source ruby chocolate, a product of celebrated chocolate-maker Callebaut, for my mole rosada (pink mole). Made from ruby cocoa beans harvested from trees grown in and influenced by the unique terroir in Ecuador, Brazil, and West Africa, the chocolate has a natural rose color and distinctive berry-like taste.
