  • 4 Anya or Charlotte potatoes (or any waxy new potato), very well scrubbed
  • Grapeseed or other neutral oil for deep-frying

Method

  1. Scrub the potatoes clean. Then, working over a small mixing bowl nearly full of cold water, slice the potatoes into thin-as-possible discs using a mandoline. The slices should be see-through thin. Remove excess starch from the potatoes by rinsing them in one or two changes of water, until the water is clear.
