  • 110 g water, piping hot from the tap (weigh it)

Method

  1. Put the chanterelles in a sieve and rinse clean under cold tap water. (Don’t buy into that whole line about never washing mushrooms; it’s bullshit for most mushrooms.) Wash them well, just handle them delicately so they don’t crumble.
