The filling for the apple pies is a mix of an apple compote and an apple jelly. The jelly turns into the hot gooey ooze that makes the pies so appealing; the compote has the chunky, comforty texture of apple pie.

  • 2 small Empire apples, peeled, cored and roughly chopped
  • 65 g light brown sugar

Method

  1. Make the compote: combine the Empire apples, brown sugar, cider and cinnamon stick in a medium saucepan and slowly bring to the boil over a medium heat. As soon as the mixture boils, remove the apples with a slotted spoon and transfer them to a mixing bowl (leave the cinnamon stick in the pan).
