This is the easiest way I know to cook zucchini and other summer squashes. Grate the zucchini with the help of a food processor and then sauté it over high heat. You can sauté the vegetable plain or with shallots and fresh herbs (my favorite is tarragon).

In the classic French version, the zucchini is first salted for 30 minutes to rid the vegetable of excess water, then drained and squeezed dry before cooking. I don’t have time for this during the week, so I sauté the vegetable at
