The yellow in the title of this recipe refers to the couscous; the orange, the navel oranges and grated carrots.

Whatever the title, the taste is terrific, fresh and unexpected. To supplement this salad and round out the meal, make a second salad of either beans, sliced smoked turkey, or salmon, dressed with a Basic Vinaigrette.
