A delectable meal can be made of these delicious corn pancakes accompanied by a portion of a favorite bean dish, a slice of Cheddar cheese, or a plate of stir-fried vegetables. The pancakes can be made in advance and reheated for 10 minutes in a 350° F oven or for a minute in the microwave.

  • 2 scallions (green onions)

  1. Core and seed the bell pepper. Trim and cut the scallions into large pieces. Place the pepper, scallions, and corn kernels in a food processor and process until smooth. Add the remaining ingredients except the oil and process again until smooth, about 1 minute.
