This “instant cake” is from my childhood. It is really nothing more than a confection of plain chocolate wafers layered with whipped cream, but I think it is great during-the-week party fare. It is best made a day in advance, and the longer it stands, the softer the cookies become, so that their texture resembles that of cake.
I prefer to make this cake with plain round chocolate wafers, but, when I can’t find them, I substitute chocolate cookies shaped like teddy bears or dinosaurs
