If you want to make these ahead of time, prepare the caramelized tomatoes, divide between the patty tins and, once cool, top with the pastry. Keep in the fridge until you are ready to cook them, then just give them a couple more minutes in the oven than stated below.

  • 25 g butter
  • 2 large shallots, thinly sliced
  • 2 tablespoons

Preheat the oven to 200°C/fan 180°C/gas 6.
