Caramelized Crêpes with Bitter Orange and Brandy Sauce

These are deliciously sweet and quite filling, so you might find serving just one crêpe per person is enough. If that is the case, cut down all of the ingredients by half. I must say, however, I can manage two quite easily!

Ingredients

  • 200 g caster sugar
  • 8 tablespoons fine-cut marmalade
  • 12

Method

Place the caster sugar on a flat plate.

Spread a layer of marmalade over each pancake/crêpe and then fold in half and in half again to give you twelve triangles (you will have some marmalade left over). The pancakes can be kept in the fridge at this stage until needed.
