You may be surprised to find that this really is a simple recipe. It just needs a little advanced planning as the beef must be soaked for three days before cooking Corned beef is readily available for everyone, but it’s so good to eat it home-made. The texture is similar to a standard corned beefi but this recipe isn’t quite as pink in colour. The pig’s trotters are optional but will help to create a jelly in the cooking liquor.
Corned beef is lovely to eat with chutney for tea or s
