I’m not quite sure if champ comes from Scotland or Ireland. I first experienced it in Northern Ireland, but have read in several books that it was first made in Scotland. It’s one of those recipes that everybody believes their way is the only way to make it. Well, I’m not going to say that this is the way; I’ll sit on the fence and just give you my version of champ!

The dish can be eaten on its own or just as a potato dish with boiled ham or bacon. I normally serve it with a boiled
