Bubble and squeak is traditionally made using potatoes, onions and Brussels sprouts, the name coming from the noise it makes while cooking. I get the occasional mad idea of what variations can be made to the dish – here’s one that actually works. It goes well with venison, pheasant, pigeon or just about any game.
