Brandy snap biscuits are easy to make and can be made into various shapes and sizes. I like to serve them with sorbets and ice-creams. If you roll this mix into balls the size of a 2p piece and push them on to a buttered tray, the mix will spread to give you a disc big enough to place over or in a cup to make a basket for your ice-creams. But always make sure that you keep a good distance between each one on the tray or you’ll have just one large tray of brandy snap!
