Chris Cooke, a friend and an excellent cook, showed us this delicious montadito made with crab from his local fish market in Jerez. The Oloroso sherry gives the crab a savoury richness and perfume. At Morito we cook and pick our own crabs and include a little of the brown meat, which makes the dish sweeter and more luscious. Crab montadito is a favourite at the Morito seafood festival held every September.
