When we asked what sort of shrimps were used for these, our host said, ‘I don’t know what they are called, but they must be alive.’ The next day we did a double-take at a lady sitting outside Jerez fish market. Her basket’s inhabitants were jiggling and jumping, and sure enough they were the live shrimps, ‘camarones’, for sale. Jumping shrimps aside, this is one of our most loved things to eat. They are crispy and lace-like, with a taste of the sea.
