Try to get hold of the double-suckered Mediterranean variety of octopus. These are larger, tastier and more tender than those with a single row of suckers. Unfortunately they are hard to come by in this country, but give your fishmonger plenty of warning and encouragement, and he or she might be able to find one in the fish market.
