Grilled Sardines

Grilled sardines are one of the great fish tastes. Whenever we say ‘grilled’, we ideally mean over charcoal, but this dish will still taste fantastic if cooked under a domestic grill. In the south of Spain, it is common to see sardines staked on a stick, ‘al espetón’, and grilled over a wood fire. We have recently taken up the habit of sprinkling salt on the fish half an hour before grilling. This slightly firms up the flesh of the fish and imparts a pleasant saltiness. The mixture of chopp
