Grilled sardines are one of the great fish tastes. Whenever we say ‘grilled’, we ideally mean over charcoal, but this dish will still taste fantastic if cooked under a domestic grill. In the south of Spain, it is common to see sardines staked on a stick, ‘al espetón’, and grilled over a wood fire.
