Wheat berries are hulled whole grains of wheat that have an interesting, slightly chewy texture, usually used in soups, pilavs or puddings. They are available in Lebanese shops. You could use pearl barley instead.
Simmer the wheat berries in 1 litre water with the onion for 40–60 minutes or until tender, then drain. Pick over the mushrooms for any bits.
