Fish Marinades

Sometimes we marinate fish, but marinades are by no means essential, especially when the fish is extremely fresh. Nor does fish need to marinate for long, as the marinade is not required for tenderising, but to impart a delicate flavour. Below are two simple marinades that we sometimes use for any fish, one Spanish, the other Muslim Mediterranean.
