Caramelised garlic and sherry vinegar sauce is a hot dressing that we use for skate, but it also goes well with grilled lamb. The secret is to fry the garlic until brown (more mahogany than golden), as this gives it a nutty flavour. The other tip is to greatly reduce the vinegar: this softens the astringency while helping to concentrate other flavours.
