Kibbehs are a classic throughout the Middle East, particularly in Lebanon and Syria. Although there are many variations, they usually consist of an oval outer casing of ground lamb and bulgur with a stuffing of spiced lamb and pinenuts inside. Shaping kibbeh requires practice – the traditional way (we tell our chefs in the restaurant) is to imagine the shape made when someone puts their hands together in prayer.
