Every bread-loving country worth its salt has devised a way of using old bread. Migas is Spain’s; bread sauce or bread and butter pudding must be England’s. In this time of mass consumerism, using old bread can be surprisingly satisfying. ‘Migas’, which literally means breadcrumbs, in its simplest (and more authentic) form is bread fried with pork fat. This more complex version with morcilla (blood sausage) makes for a hearty lunch.
