‘Escalivada’ originates from Catalunya in north-eastern Spain. It gets its name from the Catalan ‘escalivar’ which means ‘to char’, for traditionally the vegetables are cooked over hot coals. Nowadays a barbecue is ideal for making escalivada as charcoal imparts that magical smoky flavour, which is more difficult to achieve with conventional ovens.
