The most famous of the Spanish garlic sauces is alioli. ‘Alioli’ literally means garlic and oil (‘al-i-oli’), and is the garlic version of mayonnaise (‘mahonesa’ in Spanish), that was supposed to have originated from Mahón on the island of Menorca. Alioli is most satisfying made in a mortar and pestle, if your stirring arm is strong enough and your patience complete. Equally successfully it can be beaten in a mixing bowl with a balloon whisk, or in a food processor, although with this last
