Miguel Valdespino from the famous sherry bodega gave this recipe to us. The dressing is made by mixing equal quantities of sherry vinegar and Pedro Ximénez sherry (the sweet, raisiny sherry). What you end up with is a dressing that has all the nutty complexity of the sherry vinegar dressing, but with a slightly sweeter, raisiny finish.
