I don’t eat much red meat, but Julia’s oxtail soup is one dish I cannot resist. Sup buntut is a hand-me-down recipe from the Dutch, a reflection of a more refined and expensive colonial palate. Oxtails are indeed expensive—in Indonesia and even here in the United States. So this isn’t a dish Julia or I prepare often.
