When I’m making these at home, I love to grill the oranges on the barbecue plate for extra flavour. They make a belter of a winter brunch with pancakes and mascarpone cheese – instead of maple syrup, drizzle the cardamom syrup over the pancakes just before you eat them.

  • Use the end of a rolling pin to lightly bruise the cardamom pods before adding them to the syrup – this will help release the flavour.
  • For the best flavour leave these at room temperat
