The first time I made focaccia was in a proper outdoor pizza oven in Italy on an epic travel and cooking trip. I have been trying to recreate that crust and flavour ever since, and this recipe is as close as it gets. For the best sandwiches ever, slap some crispy bacon, mayo, lettuce and avocado in between a couple of slices while it’s still warm.
