Okra, or bhindi, is not an exotic vegetable in India. It is everyday, run of the mill, backbone. The fear that many have of okra is the slime they produce. To avoid this, we slice them and then fry them really, really well. This is not a chuck in the pan and stir fry ingredient. You must persevere through the slime phase of frying to the dry, delicious light at the end of the tunnel.
