When really fresh, thinly sliced raw button mushrooms can taste of coconut, and wild ceps of chestnuts. This salad is very simple to put together, and a light, fresh citrusy dressing brings all the flavours to the forefront. Do try this with other mushrooms, especially truffle, if you can get your hands on it, but do double check the directory to see if you can eat the mushroom type raw first.
