Simple syrup (medium) is made with equal parts sugar and water. Light simple syrup is made the same way but with 2 parts water and 1 part sugar.
Combine sugar and water in a saucepan over low heat. Cook just long enough for the sugar to melt. Remove from heat and let cool.
Store any unused simple syrup in the refrigerator.
