To avoid any rice settling in our paletas, which occurs with horchata, for this recipe we prefer to use commercial rice milk and some added cinnamon. You can always use our horchata recipe, just take note that some settling of rice particles will occur at the bottom of the popsicle mold. Either way, horchata popsicles are worth the effort.


  • 1 cup water
  • 1 cup granulated sugar
  • 2 cinnamon sticks
  • cup vanilla rice milk (recommend Rice Dream)


Bring water to a boil over high heat, add sugar and mix while it melts, about 1 minute. Remove from heat, add cinnamon sticks, cover, and let steep for about 2 hours. (Will make about cups.)

In a mixing bowl combine 1 cup cinnamon-infused simple syrup and rice milk. Fill six popsicle molds. Place in the freezer for about 4 hours or overnight.
