Sopes are like an open-face taco, except thicker. My Grandma used to make these but called them chalupitas (little boats). She usually made these when she had leftover asado de chile colorado (pork in red chile sauce) and would fill each one with a tablespoon of asado and some frijoles de la olla, and top each with asadero cheese, then place them in the oven to let the cheese melt.
