If you’re wandering the streets of Tokyo in search of a yakitori street stall or izakaya, just follow your nose: the tantalising charcoal smoke will lure you in. The umami smell of the grill and the taro sauce will make you crazy with hunger. Most yakitori are very simple combinations: it’s the charcoal grilling and the sauce that really makes it special. Choose the salmon, chicken meatballs or vegetables for a genius simple meal. You can use traditional teriyaki or try something a little different, like this mustard-spiked miso sauce. Skewer any of your favourite ingredients, then fire up the grill and brush with the sauces.
