Ingredients

  • 60 ml (2 fl oz/¼ cup) light soy sauce
  • 60 ml (2 fl oz/¼ cup) mirin (rice wine)
  • 60 ml (2 fl oz/¼ cup) sake
  • juice of 1 lemon
  • 40 g ( oz) caster (superfine) sugar

Method

Combine all of the ingredients in a small saucepan. Bring to the boil, then simmer over low heat for 5 minutes until thick and syrupy.
