  • 4-6 small baguettes
  • mayonnaise, for spreading
  • 1 quantity imperial pork patties
  • 2 Lebanese (short) cucumbers, sliced into ribbons with a vegetable peeler
  • 1 handful of coriander (cilantro) leaves
  • 1 handful of mint leaves
  • 1 handful of Thai basil leaves
  • 1 quantity Pickled Carrots, or 2 carrots, peeled and julienned
  • Sriracha, to serve


Split the baguettes open down the centre. Spread with mayonnaise, then fill with 3-4 grilled pork patties, cucumber ribbons, a bit of each herb and a little pickled or fresh carrot. Add sriracha to taste. Serve with plenty of napkins.
