Use this refreshing dipping sauce for fried food, grilled meat or noodles.
Put the garlic and chilli in a mortar and pestle and pound into a paste. Scrape into a saucepan, then add the vinegar, sugar and a pinch of salt. Stir over medium heat until the sugar dissolves, then simmer for 6-8 minutes or until reduced and syrupy. Remove from the heat, add the fish sauce and stand until cool. Stir in the lime juice, shallot and cucumber.
