Buy fish that has been prepared as much as possible: whole fish should be gutted and, if necessary, scaled, then filleted and all the bones removed. This leaves you with no work to do at home. It is essential not to overcook fish – pan-frying is probably the easiest way to get successful results every time. I just love the simplicity of this recipe or any of the variations.
