This makes a delicious lunch or light supper with very little effort. The sweet potato cakes are packed full of flavour, but it’s a recipe that the whole family should enjoy. It’s worth pressing the sweet potato cakes down gently with a palette knife or fish slice as they cook to help them keep their shape.

Ingredients

  • 450 g (1 lb) sweet potatoes
  • 5 spring onions, finely chopped

Method

Preheat the oven to 100°C (200°F/gas mark ¼).

Peel and grate the sweet potatoes – you’ll need 350g (12oz) in total – and place in a bowl with the spring onions and chilli. Crumble in the feta and season. Break the eggs into a jug and beat with the milk. Sift the self-raising fl
