This recipe was given to me by my good friend Mairead Lavery, who looks after my column at the Irish Farmers Journal. It’s what she whips up when visitors are coming in the door and she has nothing nice in the cupboard. It can be on the table in 20 minutes. It’s delicious with any fresh fruit, such as raspberries, strawberries or even a drained can of peach slices; whatever you have to hand, really!
