Batırık is another southern dish based on bulgur paste and tomatoes, but it includes nuts. Like kısır it is offered before tea is served, or, indeed, at any time of the day. It can be made with sesame seeds instead of pistachio nuts or walnuts. A liquid version can be made by adding 500 ml/1 pint water to the ingredients listed below, and eaten with a spoon.
