Mirtoğa is a breakfast favourite in eastern Anatolia, a speciality of Van, and a simple dish one can never tire of, particularly when it is served with the delicious and distinctive local herb cheese (p.28), the renowned honey from Kars and tea prepared in a samovar.

Throughout Anatolia there are a number of foods which are traditionally regarded as a suitable first meal for a mother following the birth of her child. Mirtoğa is one of the most highly recommended.
