You can use either of the marinades described above for these kebabs.

Remove the sinewy parts of the meat and cut the meat and fat into 3 cm/ inch cubes. Rub in the marinade and leave for 12 hours in a glass or china bowl. Thread on skewers with one piece of fat to every t
