Çebiç is a delicious meal served at big parties in Konya. The 11th-century Classical Turkish Dictionary describes çebiç as “a whole lamb kebabed in a pit dug in the earth”. The ovens at the Çatal-höyük archaeological site resemble the modern tandır or oven pit, indicating that this style of cooking dates back many thousands of years.
